I also need to know- do I wrap it in tinfoil, how long to cook, at what temp, what should be the final temp inside and anything else that is important to know. Thanks! JFSinIL Posted December 21, 2011 Share Posted December 21, 2011 Hubby did a couple out on the grill a couple years ago - I did not want the mess in the house, as they are very fatty. A LOT of fat will need to melt off an go somewhere. An entire duck, once cooked, will feed twp people. Have a ham or something else along with duck - it can be fun for a guy to mess with cooking duck. Chris in VA Posted December 21, 2011 Share Posted December 21, 2011 Hubby and I made duck one Christmas when it was just us. PP are right--sooo much fat! I'm sure you can find a recipe online. We put a very shallow drip pan on the bottom of the oven, and actually emptied the pan the duck was roasting in a couple times during the cooking time! Nothing fancy here--it was yummy. Apparently there is some trimming you are supposed to do the day before to cut down on the amount of fat. Here's the recipe we're using. Laura Corin Posted December 21, 2011 Share Posted December 21, 2011 I took the cooking time off the packet. I didn't cover it: you want it to crisp up. Put it on a rack in a roasting tin, as it will lose a lot of fat and you don't want it to go soggy sitting in the fat. Ducks aren't that big - don't expect it to feed a large gathering. The way we usually cook them is to chop a roasting pan of potatoes, put the duck on a rack OVER the pan and let the fat drip down. The potatoes are amazing.
