This weeks crockpot recipe is...Roasted Chicken and Vegetables

Bon Appetit!


1 whole chicken, about 4 pounds

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon pepper

4 potatoes, cut into 2 inch chunks

1 small onion, cut into fourths

1 (16 oz) bag of carrot chips or baby carrots

1 cup celery, cut into 1 inch chunks

1 cup chicken broth

1 teaspoon garlic powder


Spray crockpot with nonstick cooking spray.

Line bottom of crockpot with vegetables.

Pour in chicken broth.

Sprinkle garlic powder on top of vegetables.

Mix olive oil, salt and pepper together.

Rub the chicken with the oil mixture.

Place in crockpot.

Cover. Cook on low 8-10 hours.
