He wants to cook beef wellington for our Christmas eve dinner (we cook our big meal Christmas eve, not Christmas day). What would go with this? My traditional sides of green bean casserole, sweet potato casserole, and squash seem kind of meh next to something so fancy. We are definitely going to have mashed potatoes. Any other suggestions? OLG Posted December 20, 2011 Share Posted December 20, 2011 Was going to say long grain and wild rice but you've got the mashed potatoes so you could spruce those up. I usually serve fresh asparagus or fresh green beans and slivered/buttered almonds along with rolls. Truthfully, whatever your family 'likes' will be just fine! Or stick with the squash to add a different color? We are having 7 total for dinner, so I want to have enough. What is yorkshire pudding?
