Favorite kid-friendly soups?

My daughter loves borscht - the color is always a hit LOL.

 

My son's favorite is ginger carrot, and my favorite hearty soup is pumpkin.

 

We eat a lot of miso, but I've noticed that my kids' friends don't care for it. Most are afraid to even try it?

 

I can get most of my kids' friends to eat ginger carrot and pumpkin soups, though. Only a handful will finish a bowl of borscht, but it might be worth a shot at your house :)

The corn chowder whose recipe LemonPie posted here is a favorite of ours.

 

Cosmos posted this recipe previously Portugese Sweet Potato, Sausage, Kale Soup. My husband used Sweet Italian pork sausage (instead of turkey), two cloves of garlic (instead of six), and less of the red pepper than was called for. He also used bouillon cubes since we forgot to buy the canned chicken broth when we shopped and fresh kale instead of frozen.

We serve it with fresh bread and butter and enjoy it immensely.

I make one the kids like with chicken broth, diced canned tomatoes, some garlic, olive oil, rosemary, and canned garbanzo beans. I cook it all together, stick an immersion blender in there to blend up most of the beans, and then throw in some sort of small pasta shape.

My boys love tortellini soup:

 

take a package of tortellini (fresh or frozen), and boil in lots of chicken broth, add in some (1 cup?) of spaghetti/pizza sauce, and whatever veggies you have floating around the fridge/freezer. It is easy to do on the stovetop or just throw in the crockpot. Very filling as well.

I've made something similar, but without the spaghetti sauce. Your version sounds much tastier.

 

I pretty much view soup as an excellent way to use up any stray veggies in the fridge.

Curried Chicken Soup with Carrots

 

2Tbsp oil

1 large onion, chopped

3/4 lb carrots, peeled and chopped

2 tsp curry powder

1/4 tsp cardamom

1/4 tsp coriander

4 c Chicken broth or stock

2tbsp flour

 

Cook onions and carrots, covered, in oil until tender but not browned. Add spices and stir. Add broth and flour and blend all (I use an immersion blender) until you like the consistency (mine like it really smooth) Bring soup to a boil, reduce heat and simmer 25 minutes or so to thicken.

 

 

Zucchini Parmesan Soup (I think this is from the Soulemama blog, but I can't find it to link, so...)

 

3 Tbsp butter

1 tsp olive oil

1 lb zucchini, diced

1 small onion, diced

3 loves garlic, minced

1/4 tsp ground nutmeg

2 C chicken broth

1/2 C heavy cream

1/4 C Parmesan cheese, grated

1/2 C carrots, diced as small as you can

 

Heat butter and oil over med heat in a soup pot. Add zucchini, onions and garlic and cook, stirring frequently 10 min. Add nutmeg and broth and bring to a boil, then reduce to a simmer and simmer 5 minutes or until zucchini is nice and soft. Puree the soup. Return to pot and add carrots, cream and Parmesan, simmer, stirring frequently to prevent sticking, until carrots are tender.

 

 

Both of these soups above originally called for only a portion of the soup to be pureed, but my kids prefer smooth to chunky.

 

 

 

Toscano soup for the crock pot

 

2 med potatoes, diced in 1/2 inch pieces

1 lb spicy Italian sausage, browned and sliced

5 1/2 C chicken stock

2 C kale, chopped

1/2 tsp crushed red pepper (I often leave this out if the sausage is spicy--my kids like it milder)

1/2 C evaporated milk, heavy cream or milk

 

Place all but cream into crock pot, cover and cook low fro 4-6 hours. Add cream, and heat through just before serving

Obviously this can be done on the stovetop the same way.

 

 

Tortellini soup

 

3 slices bacon, chopped

1 small onion, chopped

2 cloves garlic, minced

32 oz Chicken broth (I use roughly 6 C)

1 pkg cheese tortellini

1 10oz pkg frozen, chopped spinach

 

Cook bacon until brown and remove. Add onion to pan and cook slowly until soft. Add garlic and cook 1 min more. Increase heat to high and add broth. Bring to a boil and add tortellini, cooking until done. Stir in bacon and spinach and heat through. I sometimes add a can of diced tomatoes to bulk it up.

Cheeseburger Soup from Taste of Home! I increase burger, decrease potatoes and onions and wing it on the cheese depending on how it tastes. Also it's easier to add the butter at the beginning and stir in flour mixed with milk near the end.

edit: I just noticed this recipe calls for Velveta--I just use American cheese singles.

This is a favorite that you can make in your slow cooker:

 

EASY BEANS AND FRANK SOUP

 

1 can (28 ounces) baked beans, undrained

1 can (11 1/2 ounces) eight-vegetable juice

6 franks or hot dogs, cut into 1-inch slices (We use nitrate-free chicken or turkey dogs)

3 medium carrots, chopped (1 1/2 cups)

1 large onion, chopped (1 cup)

1 clove garlic, finely chopped

1 teaspoon Worcestershire sauce

 

Cover and cook on low heat setting 6 to 8 hours (or high heat setting 3 to 4 hours) or until carrots are tender.

Hey, I'm famous! :D

 

I'm making Tortellini soup tonight. This is actually my recipe too (used with permission). I use turkey sausage to make it low-fat and I cube my zucchini.

 

White Chicken Chili is another hit around here. Smash 1/2 - 1 can of the beans with a potato masher before adding to thicken it if you want.

 

And I tried the Cheesy Chicken Chowder mentioned in the Secret Recipes thread last week and it was pure awesomeness. My DH raved and raved about it. I think I'll add some frozen peas to it next time.
