LarlaB Posted November 21, 2011 Share Posted November 21, 2011 Usually we eat pie immediately after it comes out of the oven so I'm a novice at 'storing' pies. :D I'm making at least 2 pies for T-day....an apple/pear/ginger pie as well as chocolate pecan pie (we're buying a costco pumpkin pie and I might also make a cranberry tart). How far in advance can I make them, and how to store? From what I've gathered our guests are really looking forward to pie/dessert- LOL, so I don't want to screw it up. :D THANKS! We have a pie social after church on Thanksgiving Eve, so one is always for that. My in-laws used to store them in the garage because it was cold enough to be a fridge--I don't think our garage is cool enough, at least in November. I don't dare store them on the counter because we would NOT have any pie left by Thanksgiving. Three teens and their friends in the house tend to limit the life-span of pies around here. DianeW88 Posted November 21, 2011 Share Posted November 21, 2011 Wednesday is pie making day...well, making the pie filling and baking them day. I make the crusts on Tuesday and refrigerate them. Pies really should sit awhile before they're cut (like several hours) so they have a chance to firm up. Hot fruit pie right out of the oven means the filling spills out from the pie where the first piece was cut, and then they're a runny mess.
