What are your favorite recipes for using leftover turkey?

Turkey Divan - turkey, broccoli, mushrooms, onions, etc. Mix with either cream of something soup (or 1/2 mayo-1/2 sour cream), a teaspoon or so of curry powder, couple squirts of lemon juice. Top with cheddar cheese and bake at 350* for 30-40 minutes.

 

Oh, this sounds divan.....I mean divine. :001_smile: Thank you.

turkey pot pie - I put it in a large casserole and make biscut dough instead of a top pie crust

hint - two turkey's. (and they can each have a drumstick. ;-p) we started doing two turkeys so we'd have leftovers to do stuff with.

since there are just two of us here..sometimes I have way too many leftovers after a big meal with my kiddoes. A friend showed me this many years ago. Take a big casserole or glass cake pan and just put all your leftovers in there in their own little pile. Potatoes, veggies, corn casserole, stuffing, turkey, etc. Then pour leftover gravy over it all and freeze it. Some day when you need it, pull it out and bake the whole thing and you have dinner!

 

Otherwise, Tettrazini is my first choice. Turkey sandwiches can be hot with gravy over them. Turkey hash with potatoes and onions in a skillet.

Turkey Lasagna with a white sauce instead of red..throw in some spinach. Nummy.

Rolled tacos, turkey enchiladas, turkey salad sandwiches, turkey machaca, turkey sloppy joes, turkey tamales. I am sure there is more, but I can't think of them at the moment. I always make a larger turkey to have left overs. I also use the carcass for soup.

 

Now the ham is an other story. dh and the boys are ham fanatics. I have bought huge hams in the past, and I am not really allowed to use the left overs. They prefer to pick and choose how they each will eat their ham. They will usually ask for ham and eggs on Friday, though. All I get for sure is the bone for beans.

We fry turkeys. So I take the carcasses and make a stock with carrots, bell peppers, celery and onions. Strain and remove all bones. Add back the veggies. Then I break up the turkey no one touched(usually all the dark meat) and make Cajun turkey noodle soup!

And thank you for saying "nummy". I have been ridiculed my entire married life for having ever said this. I never said yummy growing up (in MN) - it was always nummy. :grouphug:

Do you say ish or ishy instead of ick and icky??

I never heard of ish/ishy until we moved up north (same state, but the town borders MN).

I grew up in MN......not sure when I added nummy to my vocabulary!

So, it must be a MN thing. :001_smile: Hey....you outta go right on sayin' nummy and ishy.....who cares what people think. :D

 

 

I am thinking we said both? My rolodex on in my brain is full. 15 years we have lived in Michigan, and sometimes I just don't recall what words we picked up where. I thinik we said Ishy to our babies, but Ick if we didn't like something ourselves.
