AK_Mom4 Posted November 11, 2011 Share Posted November 11, 2011 I alternate breakfasts for me between oatmeal and special K cereal (the strawberry kind). DD10 likes pizza for breakfast. Leftover if she can get it, but more usually she makes pizza on a bagel with spaghetti sauce and cheese. Let me just say that unlike most casserole type things it's not better the next day. :glare: And like a previous poster's daughter, leftover pizza is one of my favorite breakfasts! Preferably cold. Karen in CO Posted November 11, 2011 Share Posted November 11, 2011 I had a frittata made with leftover spaghetti squash, onions, and mushrooms with pico de gallo, white cheddar, and sliced tomatoes. I typcially clean out the fridge of bits of leftover veggies for either omelettes or frittatas. My typical breakfast is homemade granola, Greek yogurt, and berries. Usually I try to get the kids to be happy with one of these: peanut butter/ banana sandwiches granola shredded wheat fruit salad with yogurt or cottage cheese banana milk smoothies banana bread carrot cake zucchini bread toast with butter and jam muffins peanuts and raisins When I have to cook because they ask: oatmeal scrambled eggs omelets with veggies fried eggs egg in the hole grilled cheese sandwiches french toast pancakes Oh, as I was writing this my two year old asked what I was writing and told me he likes water for breakfast. A quick but healthy breakfast we have is: pour about 1/3 cup raw oats into a bowl, add about 1/8 cup raw almonds, and maybe 1/3 of an apple -- sliced.
