Annie
I mixed up a batch of the master recipe this morning, and I forgot to put it in the fridge after 2 hours, and it was out for about 4.5 instead. Usually when I put it in the fridge after two hours it's at the top of the container, but it looks like it already fell while it was still out. Is my bread still going to turn out? I've never let it rise too long before.
ThatCyndiGirl
I don't baby my bread dough, whether it is AB in 5 or not. (I have the first book and the healthy book.) I would go ahead and use it, even if it rose funny or not enough. ETA: In my considerable experience with bread dough letting it rise "too much" is always prerable to 'not enough'. Just my experience....

I'm going to move forward assuming all will be well. :)
LauraGB
I don't baby mine much, either. I've left it sit out for 3-4 hours before, and it's never been a problem. I even keep it on the door of the fridge, and it gets slammed around from all the opening and closing all day - not a problem. Good to hear. I do that sometimes if the dough is a little older and I'm not sure it'll make a nice big loaf.
