In other words, what = "humid day" in candy-making? Or fill in the blank: "Humidity must be below _____% for me to make such-and-such candy." If it's summer I crank on the AC and go for certain types (carmels, nut brittles) but I wouldn't touch taffy or a big batch of candy with really pricey ingredients unless it were lower. If it's humid you also want to get the candy wrapped and put away in fridge/freezer or airtight container quickly so it doesn't get sticky.
