Mynyel
I made some, they were so-so. We didn't finish all of them because they were "eggy" I could smell the egg and it didn't make for a pleasant bar. Anyone have a tried and true recipe for great lemon bars? TKDmom
I vote for a box mix. With lemon bars (and brownies), I've never tried a recipe that worked as well as a box. I don't know why. Maybe it's the HFCS. ;)
LND1218
I have a recipe that is amazing - I don't have it with me. But it uses twice as much lemon as most recipes call for. They are delicious. I will post it when I get back home.
Cinder
Twice as much lemon--that's what my sil says is the secret to good lemon bars. Haven't tried to make any yet, though.
6packofun
This is the one I use. I'm sure it's from (or adapted from) something on Allrecipes: Lemon Bars (9x13 pan) 2 c. + 1/4 c. unbleached flour, divided 1/2 c. powdered sugar, sifted 1 c. unsalted butter, room temp 4 large eggs 2 c. sugar 1 tsp baking powder 1/2 c. + 1 Tbsp fresh lemon juice 2 Tbsp fresh lemon zest Blend 2 cups flour with powdered sugar and butter until mixture is crumbly. Press mixture with lightly floured hands evenly onto the bottom of an ungreased 9x13 pan. Bake for 18-22 min. at 350 (Take it out *right* after you see any light browning) Whisk together the eggs and sugar. Add remaining 1/4 c. flour, baking powder, lemon juice and zest. Remove pan from oven and quickly pour lemon mixture over crust. Return to oven for 22-25 minutes or until done. Allow to cool completely, dust with powdered sugar and cut into squares. Store in refridgerator. (I like to serve these after they've warmed a tad after taking out of the fridge, though; still cool but not room temp.) Lady Florida.
I haven't made these, but I've eaten them and they're delicious. A friend of mine made them for a book club meeting a while back.
