ISO Gluten Free Cornbread recipe

Recommended Posts

I found one that looks good, but it calls for corn flour. WOuld I just take my corn meal and run it thru the food processor or my grain mill?

Here's mine:

1 1/4 cup GF Flour Blend (below)

3/4 cup cornmeal

2/3 cup sugar

1 TBS baking powder

1/2 tsp salt

Mix above dry ingredients. Add:

1/3 cup oil

3 TBS butter (ghee or Earth Balance Buttery Spread if CF)

2 eggs

1 1/4 c milk (or or coconut milk, if cf)

Pour into well-greased 8X8 pan or a muffin pan.

Bake at 350 degrees for 35 minutes for pan; 20 minutes for muffins.

GFCF Flour Blend (Bette Hagman's)

6 cups of white rice flour

2 cups of potato starch flour (NOT potato flour)

1 cup of tapioca flour

I'd try it...can't think of any reason it wouldn't work. I buy actual corn flour, but would definitely try grinding the meal down if I needed it. :)
