arghmatey Posted February 22, 2011 Share Posted February 22, 2011 I roast beets with a splash of olive oil and red wine vinegar or balsamic vinegar at 350 for about an hour. I generously sprinkle with goat cheese and pecans (preferably candied a bit). I skip the lettuce. I also make a grilled cheese sandwich out of the same ingredients. arghmatey Posted February 22, 2011 Share Posted February 22, 2011 LOL--I posted nearly the exact same thing as PP. I think you'll find a dressing is not necessary unless you just want the extra fat. It makes eating greens SO much easier, and even the kids have started eating more salads because of it! My favorite combo is mixed greens (I love Earthbound Farms boxed salads--the perfect combo of greens for my taste!), goat cheese, cold peas and soybeans (left over from dinner the night before), chopped pecans, and balsamic vinegar and a good olive oil. I've also made a honey mustard dressing that goes well over this, and have added slices of chicken breast or chicken nuggets when I have them. Lately I've been having just greens, goat cheese, and chopped tart cherries (I prefer them over cranberries, but they're very similar). Really, it goes well with anything in your salad!
