Saturday: Ranch chicken casserole with a salad Sunday: Not sure this is dh day so probably drive-thru or delivery. I do a dessert as well not sure if you wanted those but usually brownies, cupcakes, or pie. I have been craving peanut butter pie so I'm thinking I am going to make one of those for tonight. Tues - stir fry with lots of fresh veggies, with shrimp from the freezer I need to use up. Wed etc - no idea. That I KNOW what I am making TOMORROW is a big deal! ;) I have plenty of chicken, pork, Italian sausage and beef in the freezer, and heaps of pasta/rice/taters. Wed. morning I will thaw something or decide on pasta - I rarely plain an entire week at a time. If I see a roast or large chicken at a good price then I know we will have roast, leftover roast, then burritos or hash for the next few nights. A large pot of soup of stew or chili is good for two nights in a row. I try to have one of those plastic-bagged ham slices handy for a quick meal, also cans of salmon for patties and buckwheat for kasha. So unless I see that large lump of meat on sale, most of our dinners are based on stuff I already have at home. We found the recipe a couple of Thanksgivings ago because we were all bored with sweet potatoes with marshmallows. I also assign certain days for certain types of meals: Saturday (easy) - Cheese quesadillas Sunday (meat) - Gluten free tempura chicken and veggies (broccoli, red pepper, green onions, sweet potato and zucchini) with GF birthday cake and homemade ice cream Monday (pasta) - fettucine alfredo and spinach Tuesday (soup) - Loaded potato soup Wednesday (leftovers) - Leftovers** Thursday (beans) - Lentil Stew Friday (grains) - Quinoa with shredded sweet potatoes and veggies Saturday (easy) - I am hoping that we will go to the Cove for dinner Sunday (meat) - cold cuts and cheese with fig and almond cake Monday (pasta) - pumpkin ginger pasta stirfry Tuesday (soup) - Veggie noodle soup Wednesday (leftovers) - Leftovers** Thursday (beans) - Chaana Masala, Indian Eggplant, Rice and maybe some other Indian Take-away Friday - Coconut rice with Asain veggies. ** if we don't have any leftovers, then something easy like eggs. Dinner will either be this excellent roast chicken or super quick intant type meal, depending upon when we start and finish. I'm hoping Wednesday to make a simple but yummy Indian meal from one of my new cookbooks. I cannot WAIT to try this book and any cookbook that comes with an entire box of exotic spices has got to be fun!! :D Thursday, we're making an Irish stew. And that's as far as I can go! myfunnybunch Posted February 21, 2011 Share Posted February 21, 2011 (edited) How do you cook the Swiss chard? Would you share the sweet potato tortilla pie recipe please? The Swiss chard: Wash the greens, leaving them slightly damp. Saute a little garlic in olive oil, then add the damp greens, stirring to coat with a little oil. Put the lid on the pot/pan and let cook until wilted and tender(about 3 min.), stirring a couple times. Take off the lid and let the liquid evaporate, about 1 min. Serve immediately. We also cook spinach this way. You can add raisins or chopped dried cherries, and/or toasted pine nuts or chopped pecans/filberts/almonds with the greens if you choose. Sweet Potato Tortilla Pie (original recipe is from Vegetarian Planet) Cube 2-3 sweet potatoes. Toss in olive oil and minced garlic and cumin. Bake for ~20 min at 425 until potatoes are just tender. Let cool. I often have more cubed potato than I need for the pie, but I love sweet potatoes, so I eat them for lunch the next day. Mix: 1-1/2 cups milk 3 eggs Salt & pepper Butter a pie plate. Layer 4-5 corn tortillas in the pie plate, overlapping, to form the "crust". Put the cubed cooked sweet potatoes on top of the tortillas. Sprinkle ~3/4-1 cup cheese over the potatoes. (I use a combo--jack or pepper jack and cheddar.) Pour the milk/egg mixture over the top. It's ok if it runs under the tortilla. Bake at 375 for 40-50 minutes, until the custard is set. Serve with salsa and sour cream. You can make this basic recipe with just about anything you'd put into a quiche. We like yellow potatoes and diced bacon with cheddar, swiss or goat cheese and no cumin (maybe add a touch of nutmeg). Sometimes I make one of each--A spicy sweet potato version with pepper jack cheese and a milder yellow potato and cheddar version--then we have the leftovers for leftover night or breakfast. Tonight -- broccoli-cheese soup (also a hit with the kids). Tomorrow -- either beef stew or curried chickpeas; the other will probably be for Thursday. Weekend -- probably orange pork or beef (depending on which is in the freezer in the right quantity, as we'll have company), and we might go out/order in once.
