Aubrey Posted February 17, 2011 Share Posted February 17, 2011 I just put some split breasts in the crockpot w/ bbq sauce & some water. What else should I put in there w/ the chicken, if anything? What should I serve w/ this? I think cauliflower & stir fry veggies are all we have on hand. I'm specifically looking for veggies (rice, too, maybe--would rice be weird?), esp if you can make them appear in the fridge. The van's still not running. Hehehehe. Oh, I think I've got potatoes. I realize that's still a starch, so it's not really what I'm looking for, lol, but dh & the kids would love it! :D TIA! ETA: Also have yellow onions, wilted green onions, limp celery (SUPER limp), bell pepper, probably a can of tomatoes. When I do chicken like that in the crock pot I do it just as you described, I don't add anything else. I am sure stir fry veggies would be good. 1Togo Posted February 17, 2011 Share Posted February 17, 2011 Roast potatoes. Peel and cut baking potatoes in chunks. Toss them with a tablespoon or so of olive oil and sea salt. Put the chunks in a large glass baking dish or a baking sheet with a silpat (they can stick). Bake at 400 until tender. They will be sort of crispy on the outside. Yum! You can do sweet potatoes this way as well, but you might need to use a little more oil because they can be even more sticky. Vary the spices.
