Tullia Posted February 10, 2011 Share Posted February 10, 2011 (edited) 1 1/2 c. water 2 Tbsp. powdered milk (or wheat bran) 2 Tbsp. olive oil 1/4 cup honey 1 1/2 tsp. salt 2 cups whole wheat flour 1 1/4 cups bread flour 1/4 cup wheat gluten 1/2 cup oatmeal flakes (rye, 3 or 7 grain flakes work too) 1 1/2 tsp. yeast 1/3 cup chopped walnuts (or 2Tbsp. flax meal) Bake at 400 degrees F for 15 minutes; lower the temp to 350 and bake for 30 minutes. Turn loaf onto a cooling rack and cover loosely with a towel for at least 30 minutes. If you use a light flour like Prairie Gold and oat flakes, the bread will have a nutty taste but look more like white bread. Hard red winter wheat flour and rye or 7 grain flakes make a shorter, denser loaf. It's our all-purpose recipe. We use it for toast, sandwiches, and sliced with a meal. It's a modified version of a recipe from my very first bread machine recipe book I bought years ago! If you do bake it in the machine (I sometimes do when I'm busy) use the whole wheat cycle. Sheila in OK Posted February 10, 2011 Share Posted February 10, 2011 Here is our favorite whole wheat bread recipe: 1 c. + 2 T. water 2 T. butter 2 T. honey 3 c. whole wheat flour 3 T. gluten 2 t. dough enhancer (optional, but I think it helps it stay fresh longer) 1 1/2 t. salt 2 T. yeast This can be baked in the bread machine but I usually make it on the dough cycle and bake it myself at 350 for 30-40 minutes or so. It is so good! I use freshly milled hard white flour but I used this recipe with store-bought ww flour before I got a grain mill and it turned out just fine.
