How far south can you tap maple trees?

Yes, the sap must be almost frozen (since it doesn't completly freeze) for several weeks. At that time the sap (water) absorbs starches stored in the tree. As the tree thaws the water holding up to two percent starches (sugar) can be captured via tapping. As the weeks pass (4-6) the starches decline to zero and syrup season is over. The best results are received when you have freezing nights followed by warm days. Good Luck!
