melik
I made a lentil curry dish and a little goes a long way! We have eaten it two days in a row for dinner but I think I'd better freeze the rest or the family might mutiny! My only issue is that it has some sour cream in it. Not tons I just needed something to thicken it up a bit. Do you think that if I froze it it would have an ok texture after being thawed an reheated????? secular_mom
I'm not sure. I freeze lasagna with Ricotta in it and it doesn't have a weird texture after I reheat it. Could you try freezing a single portion or less and reheating it tomorrow to see?
specialmama
It should be fine. I've frozen soups with cream in them and they were fine after fully thawed and stirred. :001_smile: It might separate a bit as it's thawing, perhaps look a little slimy-weird, but once it's stirred and reheated it'll return to it's former glory. DawnM
Won't the lentils get mushy after freezing? Maybe I am the only one with that problem. Dawn
