Turkey pot pie...I have a question

I am about to make a Turkey Pot Pie to use up some of the left over turkey we have (dh bought a 22lb turkey for 3 people!)

 

Do you think a cheddar cheese crust would go well with it or not?

 

I have a couple of recipes that I have found online, that I am going to work from. Before I start, do you have a favorite recipe?

Chicken Pot Pie

(Well Trained Mind forum -- CrunchyMountainMama)

· 2 cups cooked chicken or turkey, diced

· 2 cups frozen vegetables

· 1/3 cup butter

· 1/3 cup chopped onion

· 1/3 cup all-purpose flour

· 1 tsp. Lawry’s salt

· 1 tsp. garlic salt

· 1/4 tsp. black pepper

· 1/4 tsp. celery seed

· 1 3/4 cups chicken broth

· 2/3 cup milk

· 2 (9 inch) unbaked pie crusts

Preheat oven to 425 degrees. Pour frozen vegetables into a large bowl. Add a few tablespoons of water, and microwave for 5 minutes to soften. Drain and set aside. In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside. Pour liquid on top of the chicken mixture, and stir well. Pour all into pie crust. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape. Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.

Super Simple semi homemade (I use 2 cups of chicken though)

 

 

Chicken Pot Pie

2 cans of cream of potato soup

1 15 oz. can of mixed vegetables, drained

1 ½ c. cooked chicken, diced

½ c. milk

½ tsp each thyme and black pepper

2 9 inch pie crust.

 

Mix first 6 ingredients. Spoon into pie crush, cover with top crush. Brush top crush with beaten egg.

Bake at 375 for 40 minutes ( I bake mine for 50-55 minutes)
