kfeusse
If so, what was your recipe and how would it work in a pumpkin pie recipe??
Amira
I've never tried boiling milk down to make evaporated milk, but you can use powdered milk if you have some. Just use twice as much powdered milk as you usually would (for example, if you'd usually combine a third of a cup of powdered milk with a cup of water to make a cup of milk, use two-thirds of a cup of powdered milk for that cup of water to make one cup of evaporated milk). I use it in pumpkin pie all the time. Coconut milk is another excellent substitution.

Amira
how much coconut milk do you use for 1 12oz can of evaporated milk? You can use the same cup and a half of coconut milk, or you can replace half with water and use three-fourths of a cup each of water and coconut milk. Either way works well, since coconut milk is really rich.
Sherry in OH
If you have sweetened condensed milk you can substitute it. Just remember to leave out the sugar.
