We're going to a friend's house and there will be 6 kids there under 12. ETA: Spinach Stuffing Balls 1 3/4 cup stuffing mix 2 (10 oz.) pkgs frozen, chopped spinach, thawed & drained 1 medium onion, finely chopped 2 large eggs, beaten 3/4 cup butter, melted 1/2 cup grated parmesan cheese 1/2 tsp. garlic powder 1/2 tsp. thyme 1 tsp. salt (this is included in the recipe, but I leave it out completely, as the stuffing mix provides plenty of salt) 1/2 tsp. pepper Lightly grease a baking sheet. Combine all ingredients. Form mixture into 2" balls. Place balls on baking sheet & bake at 350 degrees for 20-25 min. My kids would gobble up baby carrots, sugar snap peas, blanched green beans, bell pepper strips and olives. It isn't healthy, but my kids want pepper jelly and cream cheese on crackers tomorrow. Yum!
