chai
I've used leeks in other kinds of soup like split-pea and butternut squash.
HappyGrace
We are kind of "souped out"-just finished three days eating a big batch of chicken soup (with lots of leeks).
Medieval Mom
Our favorite is savory leek tart. :)
Cedarmom
I just use them in any recipethat calls for onions (maybe not mexican-you need a little more bitter onion) Just toss them into whatever you're cooking, leeks add a good flavor. mellifera
We made a leek, pepper, tomato, and black bean concoction with Mexican spices and put in tortilla shells. It was quite tasty.
LibraryLover
You can use leeks in ways you might use onions.
HappyGrace
Our favorite is savory leek tart. :) Do you have a good recipe? Yes, I would usually use them like onions but I need to use them all up by tomorrow or they won't be good.
TN Mama
http://www.boston.com/lifestyle/food/articles/2010/11/07/pumpkin_leek_and_smoked_cheddar_strata/ I've not made this yet, but it sounds YUMMY!
myfunnybunch
I just use them in place of onions. Halve and chop, saute in olive oil or butter. They've got a lovely mild flavor. Quiche made with leeks is delicious. Cat
ElizabethB
They should freeze fine, I would think.
Laura Corin
I like to saute leeks gently in butter/olive oil and serve them with panfried salmon. Make sure not to let them singe - leeks go bitter if overheated. Laura
lilbean05
I saute them and then mix them in with mashed potatoes with some garlic and thyme. Yummy!
missesd
We made this for the first time around St. Patty's Day and LOVED it!! mcconnellboys
A chicken and barley stew. Add chicken broth to a crockpot, along with chicken thighs Season with parsley, sage, rosemary, and thyme, sliced leaks, diced onions, chopped celery Simmer until done. Add a cup of pearled barley about an hour before you're ready to eat.
mcconnellboys
Oops, sorry! Just saw that you're tired of chicken. This would be good with lamb, too....
jld
Boil them, chill them, cut them in slices, and add a vinaigrette. Wonderful salad.
Giraffe
Turkish Leeks in Olive Oil (Pirasa in Turkish): Saute in olive oil a small chopped onion, add the leeks, roughly chopped into bite size pieces. Add carrots, sliced into rounds. Add a bit of rice, some water, salt, pepper, some lemon juice, and dill. Let simmer over med-low heat until veggies are soft and rice is fully cooked. Serve chilled or at room temp. I add an extra spray of lemon juice when I serve, but I like it sour.

HLDoll
Leek, bacon and goat cheese pizza! Yummmmm! I think Pioneer Woman has a recipe for it on her website. Fabulous!
thescrappyhomeschooler
Do you have any fish? I chop them up and use them as a base layer with some olive oil. I set the fish on top in a baking dish, then sprinkle some more leeks and other herbs on top with a squeeze of lemon and bake.
HappyGrace
Excellent ideas-thank you! I decided on this one: http://localfoods.about.com/od/maindishes/r/leektart.htm with the butter tart crust, and I'm going to add cut up cooked chkn to make it a meal. Going to serve with a baby bok choy salad (also from the CSA box!) So much fun learning to cook with local organic foods! Going to save the other ideas for another time, for sure! myfunnybunch
Thanks for posting to ask, HappyGrace. It reminded me that I have some huge leeks in my garden, so I used them in place of onions for my squash soup. It was fantastic! :) CSA offers a great cooking challenge, doesn't it? I've often thought that our local cooking store should put on a CSA cooking class. Cat
Cedarmom
I think this posted yesterday, so I may be too late. You can freeze them(cut) and serve in soups later.
Medieval Mom
Our favorite is savory leek tart. :) Do you have a good recipe? Yes, I would usually use them like onions but I need to use them all up by tomorrow or they won't be good. I am sorry I didn't see this in time for you! Our recipe comes from Mrs. Beeton's; but my cookbook is still packed away since moving. Does anyone out there have Mrs. Beeton's recipe? This recipe is similar. We used whole cream and Gruyere, or another nice, robust cheese (preferably one the inlaws gave is that is a little too strong for sandwiches ;) Even odds and ends you happen to have are a great.) If you use a mild cheese, which is equally delicious, add a generous sprinkle of nutmeg. Oh dear! Now I'm hungry for this myself :D Edited November 20, 2010 by Medieval Mom

Snickerdoodle
Leeks grow in sandy soils so make sure that you wash them properly before using. Slit them lengthwise and sort of fan them open while rinsing thoroughly. And if you think this is a bit much, I once at leek soup at someone's house who did not do this. :ack2:
