Audrey Posted November 9, 2010 Share Posted November 9, 2010 (edited) I don't really like chicken, but I can tolerate it when marinated, grilled, sliced and placed atop a nice salad. My fave recent chicken salad: Marinate chicken breasts in olive oil, raspberry vinegar, salt and pepper. Then grill and use a raspberry/poppy seed vinaigrette for salad dressing. (1 part olive oil, 1 part canola oil, 1 part raspberry vinegar, 1 tsp or so of poppy seeds, 1 tbsp or so of honey, salt, pepper -- then emulsify). I also kind of like chicken quesadillas, in which you can use leftover chicken if you have it, or cook some fresh. Season with some ground cumin & coriander, salt & pepper. Add a fave cheese, some chopped scallion or green chili, or other bit of zippiness. My dh's fave chicken dish is Chasseur, which is a simple recipe from his mom. Remove the skin from a chicken's worth of pieces. In a skillet, cook chicken pieces in a small amount of oil, until lightly browned. Skim any fat from the pan. Chop a small onion and a stalk of celery. Add to pan and sauté briefly. Add a large can of stewed tomatoes, 1 tsp. of tarragon, a big pinch of grated nutmeg, salt & pepper and 1 c. of chicken stock (more or less) to cover the chicken. Cover and simmer for 30 minutes. Uncover and simmer another 20 minutes. This makes a saucy dish that is very tasty served over homemade noodles (in the original recipe) or over rice. The original recipe also called for mushrooms, but dh doesn't eat mushrooms. He only eats around mushrooms. iquilt Posted November 9, 2010 Share Posted November 9, 2010 Oven baked chicken- I use plain bread crumbs that I season with basil, oregano and thyme.
