I have to make snacks to take Friday morning and since we're meeting from 9.30 to Noon, I feel like something breakfasty/brunchy/not too sweet but sweet enough. We're making homemade applesauce today and I think applesauce and breakfast cookies sounds good. Okay, let me have them! Pretty Please! thescrappyhomeschooler Posted November 2, 2010 Share Posted November 2, 2010 I've made these and they are tasty: 1/2 c. butter, softened 2/3 c. packed brown sugar 2 eggs 1/2 tsp. vanilla 1 c. whole wheat flour 1/2 tsp. baking powder 1/4 tsp. baking soda 1/2 tsp. salt 1 c. rolled oats 1 cup dried mixed fruit bits-dried cranberries, raisins, cherries, apricots 1/2 c. dried banana chips, broken up 1/2 c. chopped walnuts, peanuts, pecans or almonds Preheat oven to 350. Grease a cookie sheet. Cut up butter with table knife. In large mixing bowl, beat butter at med. speed until creamy. Add brown sugar, beat until combined. Add eggs and vanilla. Beat until combined. In small bowl, mix whole wheat flour, baking powder, baking soda, and salt. Stir flour mixture into egg mixture. Stir in oats, mixed fruit bits, banana chips and nuts. Scoop the dough w/ 1/4 c. measuring cup. Drop in mounds 2" apart onto prepared cookie sheet. Use your hands to slightly flatten dough. Bake 12-15 mins or until cookie edges begin to brown. Medieval Mom Posted November 2, 2010 Share Posted November 2, 2010 (edited) Vegan Energy Bars 2 cups sunflower seeds or almonds (or a combination), soaked overnight in water 2 apples, cored and sliced 3 bananas 1/2 cup dates 1 teaspoon vanilla 1 teaspoon sea salt 1 teaspoon cinnamon 1 cup currants, raisins, or any dried berries 1 cup walnuts or pecans, chopped, or powdered oat flakes Process first four ingredients in a food processor until smooth. Transfer to mixing bowl and stir in remaining ingredients. Drop onto lightly oiled baking sheet or Silpat. Bake at 400 for 15 min. or so, until done. Or, dehydrate. Breakfast in a Cookie This is a brilliant way to get your bowl of oatmeal, milk and fruit all in a convenient, not to mention delicious cookie! This recipe makes a lot so you can freeze plenty for weeks of quick breakfasts, desserts and snacks. 1 cup oat bran (dry, uncooked) 3/4 cup orange juice 1 cup + 1 T applesauce, unsweetened 2 T canola oil 1 cup honey 1/3 cup fi rmly packed brown sugar 3 lg eggs 1½ T vanilla extract 1 T grated orange rind or 2 tsp orange extract 3 cups whole-wheat pastry fl our* 1 T baking powder 1½ tsp baking soda 1 cup nonfat dry milk 2½ cups oats (quick-cooking or old-fashioned) 1 cup nuts 1 cup raisins 1 cup ground fl ax seed (opt) Mix together in a small bowl and set aside to soak for 10 minutes. Meanwhile, combine in a large bowl, using an electric mixer, until smooth. Measure into a sifter and sift over applesauce mixture. Add the soaked oat bran and remaining ingredients to the large bowl and mix thoroughly with a strong wooden spoon. Drop by slightly heaping tablespoons 1" apart. (To save time, load cookie sheets up with as many cookies as possible, baking 2 trays at a time. Stagger trays 1 to the left and 1 to the right, to allow air circulation around each outer edge.) Bake until lightly browned or 12 to 14 minutes. *If you don’t have whole-wheat pastry fl our, you can substitute with 1½ cups whole-wheat and 1½ cups all-purpose fl our. chickenpatty Posted November 2, 2010 Share Posted November 2, 2010 I've made them before, using an oatmeal cookie recipe (there are healthy ones) and making sandwiches with them. DarcyB Posted November 2, 2010 Share Posted November 2, 2010 Breakfast Cookies Mix this: 1 C Melted Butter 3/4 C Honey 2 eggs 1/2 C Buttermilk (and if you don’t have any buttermilk on hand, click here) 1 tsp vanilla extract (the good stuff) Then mix this and add to wet: 1 2/3 C Whole Wheat Flour 1/3 C ground flax seed (if you don’t have this, just do a full 2 C whole wheat flour) 2 C Rolled Oats (also known as pinhead or Old Fashioned) 1 tsp baking soda 1 tsp salt 1/2 TB cinnamon Blend in this: 1/2 C raisins or other dried fruit 1/2 C chocolate chips – the darker the better 1/2 C sesame seeds or other nuts Some other options: poppy seeds (though I only did about 1/4 C) coconut flakes (you’ll need to add a bit more liquid if you use these), non-flavored or vanilla flavored protein powder, pureed pumpkin. Preheat your oven to 350. Mix dry ingredients in one bowl, wet ingredients in another, then add the wet to the dry and mix only as long as needed until it’s incorporated. Then fold in the additional ingredients. If you find that the mixture is still a bit crumbly, or the oats don’t seem to be fully hydrated, use a bit more milk. In rounded tablespoons or with a cookie scoop, drop dough onto a cookie sheet lined with parchment paper and cook for about 12-15, but watch to check yours after 10 min. These do not spread much and are a cake-like consistency. more info on the blog and pics..but we LOVE these. They freeze better uncooked than cooked..so make a big batch and freeze the dough balls so you can quickly bake fresh ones in the mornings!
