Does that mean just soaked, or cooked? The recipe looks great-can't wait to try it! I hope you see this somehow! Yes, you don't put it over heat and cook it 20 min like rice, but it's still the only way to prepare it unless you're doing larger grained Israeli couscous. So anyway, am I understanding correctly: If it's for two cups of couscous, pour two cups of hot water over two cups of couscous until the water is soaked up? Thanks! Grrr-I wanted this for lunch tomorrow :( Can I still make it with quinoa? It was originally a tabouleh, I think. I will do a search for the recipe on here and try to post it. We could not stop eating this stuff. DS4 loved it so much he had 3 servings and we all shared the rest for lunch the next day, which was amazing because my kids typically do not eat leftovers well. Couscous Salad 2 cups dry couscous, prepared 2 cans chickpeas, drained and rinsed 3/4 c. fresh lemon juice 2 Tbs. olive oil 3 garlic cloves, minced 2 c. finely chopped red onion 5 c. chopped tomato 1/2 c. chopped fresh parsley 1/2 c. chopped fresh mint 1/2 c. chopped fresh dill 2 c. chopped seeded cucumber salt and pepper to taste Just put it in a giant bowl and mix it all up.
