Julie in CA Posted October 12, 2010 Share Posted October 12, 2010 Sweetened condensed milk is *very much* sweeter and thicker, and will change both the taste and the texture. If you have regular milk, it would be better to substitute with that, imo. If you have dry milk powder, reconstitute it at a stronger ratio, and then use that. Sherry in OH Posted October 12, 2010 Share Posted October 12, 2010 I have two pumpkin pie recipes - One calls for 3/4 cup of sugar and 1 can of evaporated milk. The other calls for one can of sweetened condensed milk and NO sugar. Otherwise the ingredient lists are nearly identical (the 2nd calls for 1/4 tsp. more ground cloves). Both make very good pies.
