Rich with Kids Posted August 9, 2010 Share Posted August 9, 2010 I am finding my kids like to put stuff on baked potatoes. I am trying to plan several meals a week using this idea since it's CHEAP. Chris in VA Posted August 9, 2010 Share Posted August 9, 2010 chicken with a little alfredo sauce (so, just use potato instead of pasta, basically--not really a money saver, but you don't have to use much chicken--one breast is enough for 4 people) Sometimes we do "lid potatoes" from the book, Betsy-Tacy, for lunch. You just bake the potato, cut a lid in it, scoop out most of the potato, combine it with milk and butter, and stuff it back in. It's like mashed potatoes stuffed into the skin. Mmmm! Red beans and rice, but I have to have sausage and you can go way beyond "broke people" food with that, spaghetti and loaded potatoes. AuntPol Posted August 9, 2010 Share Posted August 9, 2010 I usually bake potatoes and pull out all the leftovers to use as toppings That little bit of leftover broccoli topped with cheese Chili with cheese or sour cream or neither Spaghetti Sauce -can be topped with some mozarella Leftover beef stew and peas Taco meat and cheese and salsa Baked beans pizza sauce, cheese, and pepperoni Pretty much -most dishes I have leftover can go over a baked potato or eggs. Then add an ice cream scoop of butter and sour cream, shredded cheese, chives, a lot of chopped brisket (about 1/2 lb) and a ladle full of BBQ sauce. They put a pickle on the side.
