MelanieM
I would love to try some fabulous bean recipes. Anyone have yummy ideas to share? Extra points if you can recommend something that hides the texture of the beans, or makes them less noticable in the dish. Apparently my husband seems to think beans are not to his liking, and I'd love to prove him wrong. ;)
Parrothead
Green beans? I like to grill them after a toss with olive oil, salt and pepper. I like to fry them in a wok (or frying pan) with a bit of olive oil, salt and pepper. I like them steamed and tossed with (real) butter, salt and pepper I like them in stir-fried veggies over pasta. duckens
This exact minute, I am making salsa. The pressure cooker just finished making the black beans. (Of course, you can certainly used canned beans, too. Rinse well). Salsa: Black Beans Corn Tomatoes (chopped) Onion Red or green pepper 1 Jalapeno (no seeds) Whatever else looks good Eat with chips. Loverboy mixes his serving with shredded cheddar cheese and eats with chips.
duckens
Another idea: We make homemade taco pizza. We use refried beans instead of tomato sauce. Taco pizza: Crust Refried beans Taco meat Black olives maybe onion Cheddar/Mozzarella mix of cheese. Bake. Top with lettuce, tomato, taco sauce, etc. ETA: And DORITOS!!!! Sun
We like to roast chickpeas - rinse a can of chickpeas (or use ones cooked from dry) and drain well. Toss with small amount of olive oil (approx 1 tbsp), spread in single layer on baking sheet, sprinkle generously with salt, and bake until starting to get crisp, stirring occasionally. At 350, it takes about 45 minutes to an hour to cook, but I sometimes bake them at a higher heat when I'm doing something else in the oven too. We eat them as snacks/appetizers before dinner. This is one of our favorites too! Sometimes, if we're feeling it, we will coat them all in wasabi for the last 10 minutes that they bake. It adds a nice kick. MelanieM
Chucki, I was originally thinking of things like kidney beans, black beans, etc. but now you have me craving green beans! I'm looking forward to the next trip to the grocery store. Yum! Laura, any type of beans... I'm just looking to branch out. Duckens, I love salsa! And the taco pizza sounds really interesting. I think we'll try that next week. Sun, roasted chickpeas sounds so yummy... and easy! Thanks for the suggestions, everyone! Keep 'em coming! :D
Denisemomof4
can I just say that every time I read your title it makes me giggle? I don't know why. I guess I'm simple minded.
Cedarmom
We maske sloppy joes or taco meat with red beans and hamburger. Cook the hamburger, toss in red beans (already cooked) add seasonings, simmer in tomato sauce, then mash the beans. Red beans mash very well and blend in with the hamburger. Farfalle(sp?) puree garbanzo beans, bread crumbs egg, garlic. fry in 1 Tb. oil obrown on each side. can be served as hamburger or in pita bread with tzaki sauce. Well, considering that I got quite a chuckle with your lemur story the other day, I guess I owe you one! ;) We maske sloppy joes or taco meat with red beans and hamburger. I don't know why I never thought of mashing beans up in my meat sauces, but I think I'll start doing that this week. :D
Parrothead
Gotcha! Black-eyed peas and lima beans are cooked with some ham until tender. White acre peas too. My mom is bringing me some. I can't get white acre peas here. Pinto beans are used for all things Mexican - either in the main dish like burritos or on the side with things like tacos. Black beans and kidney beans I use interchangeably with things like salsa, pasta salad and chili Chick peas get made into hummus. Great northern beans and small white navy beans are used for baked beans. And the ultimate every bean soup. All those bits of left over dried beans that will never make an entire serving much less a meal.
