Maybe you could make pie, using a gluten-free flour for the crust? What about homemade ice cream? If dairy is an issue, you can make coconut milk ice cream. Google Specific Carbohydrate Diet and you should be able to find some recipes. Nestof3 posted a gluten free cake made with garbanzo beans awhile ago and said it was delicious. Lisa ETA: Is there a Maggie Moo's ice cream place in your area? They make ice cream cupcakes and are very allergy friendly. I had them make a special batch of those cupcakes for my son's birthday last year that did not have any cake in them, just the ice cream, and they were beautiful. It did have rice flour though, so not completely flour free. That sounds delicious! Where can I get that recipe? My ds7 has a birthday coming up and he is allergic to milk, eggs and nuts. Creamsicle Cake 1 cup water 1/2 cup orange juice concentrate 1 cup sugar 1/4 cup vegetable oil 2 teaspoons vanilla extract 3 cups white rice flour 1 tablespoon baking powder 1/2 teaspoon salt Combine all ingredients and mix until smooth. Pour into 2 8-inch greased cake pans (I use vegetable shortening for this) and bake for 40 minutes or until firm in the center. Cool on a cooling rack. I'm not sure how this recipe would work with regular flour, but I think it would be fine. Frost w/ Chocolate Frosting 1/2 cup vegetable shortening 3 cups powdered sugar 2/3 cup unsweetened cocoa powder 1/4 cup water 2 teaspoons vanilla extract Place all ingredients in a food processor and pulse until smooth. In that case, if you can get yourself to a good health food store, you should be able to find a gluten free cake mix that meets all your requirements. Some of the mixes are quite good now. This company has cakes that look like they would work. http://www.thecravingsplace.com/products.htm I've tried their spice cake in the past and enjoyed it. I've ordered their products off of amazon before. There are also gluten free icing mixes that might meet your needs, but I haven't looked into that. If not, you could look into Enjoy Life chocolate chips and if those worked, you could melt them and drizzle that on the cake. I hope you find something that works!
