Tap Posted July 28, 2010 Share Posted July 28, 2010 Every summer I make 70-100 6oz jars of jam. I make strawberry, raspberry, mixed berry (depends on what I can buy), and raspberry/jalapeño. I made 36 plain raspberry today and it got me wondering...what else to people mix into their freezer jam? I like the Ball brand of pectin and since I pick my fruit the day I make the jam (I know it is full of natural sugar), I reduce the sugar by 1cup and it sets up fine. Does anyone else tweak recipes? I just have such a hard time when the recipe is more sugar than fruit..LOL. What is the best way to wash berries? I clean my sink, fill it half way with cold water, toss in the berries, pick out the bugs (our berries have no pesticides so there are always hitchhikers-thus why I wash them so throughly) and debris, pull them out in my hands-tipping them this way and that to get the water out, and then toss them in a bowl. Before I make the jam, I drain the bowl one more time to get the excess water out. How do you wash the berries? Do you make freezer jam with anything other than berries? I like freezer jam the best since the fruit isn't cooked. Any great tricks along the way that you have found help the process go smoother?
