MomOfOneFunOne
Being vegetarian we've never made these before (gelatin in the marshmallows) and have only had commercially made ones that didn't have gelatin. We discovered that marshmallow cream doesn't have gelatin AND that it could be used to make rice crispy treats . . . so we tried it. We were going to make them into star shapes and make some red, some white (well, plain, actually) and some blue. Our first batch, the plain ones, didn't hold together. The instructions say put 1/4 c. butter in the pot and melt. Add 7 oz jar marshmallow cream and stir constantly till well blended. Add 5 C. of rice crispies and blend. Press into buttered 9x13 pan. Let cool, cut. They taste nice but dont' hold together. Why?
mcconnellboys
Well, you need to compress the mixture into the pan, not just spoon it in. If you don't compress it while it's hot, then it's just a loose mixture like a granola. You actually take your hands (buttered) and press it down. MomOfOneFunOne
Hmmm, I think this may have been the problem. I was stiring in the rice crispies while my girl was somewhat slowly buttering the pan. ;) They were already cool when we put them in the pan. Though we did press them in. They need to actually be hot when I press them?
StephanieZ
I like to butter my hands to compress them. . . It is so quick and easy, if a bit slimy. :)
patchfire
Try using 4 c. rice krispies. My dad is the treat maker in my family and makes them a la the old recipe. 5 c. = too dry, in his studied opinion. :)
