Daisy
I have some bok choy I need to use up. I like it in stir fry but that didn't go over so well with my 7yo DS. Miso soup? Otherwise I'm pulling a total blank. Anyone have a good recipe? It doesn't have to be THAT kid-friendly. He is used to eating some pretty far out things. He just didn't like the stir-fry. shalom22
I have a great soup recipe: Asian Big Bowl from Kosher by Design, Short on Time by Susie Fishbein 1/2 small head Napa cabbage, about 3/4 lbs. 1 small head bok choy 8 cups chicken stock 2 boneless, skinless chicken breast halves, sliced into very thin strips 1/4 cup grated carrot 1 packet of Ramen noodle (discard seasoning packet) 1 T Miron rice cooking wine (I exclude this) 2 T soy sauce 3 scallions, sliced very thin for garnish Thinly slice the cabbage and bok choy. Set aside. Pour the chicken stock into a medium pot and bring to a simmer over medium heat. Add the chicken, carrots, cabbage and bok choy. Simmer for 5 minutes or until chicken is done. Add ramen noodle and cook for 2 minutes. Remove from heat and stir in the Mirin and soy sauce. Ladle into bowls. Garnish with sliced scallions. Of course you can substitue or be creative with the ingredients, but this is very tasty and my kids liked it.
Daisy
This sounds good! I was thinking maybe wonton soup. I think my son might have fun making them. Your recipe gives me a great base. Think I'll leave out the ramen and add in wontons. That should be fun! Thanks.
Jean in Newcastle
I think you could use in place of celery in some recipes if you cut it up small enough. We use it in stir-frys and soups mostly.
LibraryLover
Lasagna? Miso soup would be good, chop it very finely. I think the trick for some kids is to chop it inot very very tiny pieces, even in stir fry. It's got a rather mild taste, but some kids aren't about the leaves and stems. lol Cook it well, esp the stems. Bok choy is one of my favs
whitestavern
I just made a beef and bok choy hot pot last night. Here's the recipe. Both my kids liked it. http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=443495

Jane
What kind of sauce do you use on your stir fry? Mine all love a good peanut sauce. There are lots of yummy free recipes online. My apologies for this recommendation if you have any nut allergies in your home.
Devotional Soul
I don't have any recipes, I just add in it with veggies. But I would like to tell about how my 84 year old neighbor looks like he is 40 and he is a bok choy nut, grows a huge garden of it and eats lots everyday. He goes on long walks, does hard yard work and shoveling, and is seriously the healthiest 84 year old I've ever seen.
Daisy
A peanut sauce is actually a great idea. I usually just use some Asian sesame oil and low-sodium soy sauce (Dh and I like added hot chilies also). Branching out would probably be a smart way to go.
