1bassoon
My neighbor gave me TONS of tomatoes, I'd like to make sauce and freeze for future use. Who's got a good recipe?
melis108
My favorite is very easy! You just saute garlic in extra virgin olive oil, add diced tomatoes and simmer for 30 minutes or so then add some chopped fresh basil and salt to taste. It is SO good and so easy! Laurel
We use this one, from Animal Vegetable Miracle. It's really really good. If you're going to freeze it, rather than can it, you can add peppers and carrots and kale, or whatever other veggies you like.
chickenpatty
I just made our first batch of the season. In my food processor, I puree (leaving them a little chunky) tomatoes (not bothering to peel them), onions, garlic, bell peppers & put them in a pot. Add a couple of pinches of sugar, salt, pepper, basil, oregano & let it all simmer for a couple of hours until it is thickened. Taste & add seasonings accordingly. I like mine a little sweet. Sorry I don't have measurements, but really, if you just throw it all into the pot, taste & adjust it, you can make it just like you like it easily.
