mamapjama
I want to make PW's potato salad for our Canada Day party tomorrow. Can I make it tonight do you think or would the potatoes be soggy?
Tammy
Yes make it tonight....I think potato salad is one of those things that is better the next day, LOL!
AndyJoy
I always make it the day before and never would have thought to do otherwise!:)
Orthodox6
Depends on the recipe. I make mine using guacamole instead of mayonnaise, so it has to be made shortly before serving. (potatoes, guacamole and fresh salsa -- oddball, but delicious !)
Big Buckin' Longhorn
Definitely the night before! It's much yummier if the flavors have a chance to sit together for a while.
BikeBookBread
I have an Alton Brown recipe that calls for a make-ahead...you soak the marinade in some apple cider vinegar. Yummy!
JFSinIL
You do want to do tater salad the day before so it can get nice and COLD, and the flavors can mingle. Yum - tater salad!!!!
stripe
But I think it will soak up the dressing, so you need to count on extra.
i.love.lucy
Depends on the recipe. I make mine using guacamole instead of mayonnaise, so it has to be made shortly before serving. (potatoes, guacamole and fresh salsa -- oddball, but delicious !) Is that the whole recipe? Chunky guac so they are in there with the potatoes, or no? Do you use reg peeled potatoes or baby reds or what? This sounds right up our alley around here in summer!:tongue_smilie:
Dobela
I almost always make mine the night before. If not, the leftovers are always way better than the fresh.
Dirtroad
Yes make it tonight....I think potato salad is one of those things that is better the next day, LOL! I agree!:iagree:

TammyinTN
It's one of those things..the longer it sits in the refrig the better it taste. I always want mine to sit for 24 hours before serving.
Crissy
I want to make PW's potato salad for our Canada Day party tomorrow. Can I make it tonight do you think or would the potatoes be soggy? Will you share with us how everyone likes the recipe after the party? I love all the ingredients, but ricing the potatoes for a salad looks very curious to me. I'd be interested to know how everyone likes the texture. Happy Canada Day!
mamapjama
Thanks everyone for the tips! The potato salad was yummy and people liked the texture. I mashed it but not to the point of creamy mashed potatoes. They still had a bit of chunk to them. I did find that, like one poster suggested, making it the night before did reduce the amount of dressing. So next time, if I were making it the night before, I would add a bit more dressing to it. It was yummy though :)
homeschoolmom4
:iagree:I always make mine the day or night before. It tastes better.
