  1. A few months ago I weighed myself and was surprised to see that I was about 50 pounds overweight. It was not attractive weight, either. If I was a stripper, the men would boo me. I was so desperate to lose weight that I tried a diet I think is drastic and not healthy long term - a whole food vegan diet. No fish, chicken, dairy, white flour or sugar. Why would I think the diet is not a healthy long term diet? I have never seen any whole food vegans who are robust. All the healthy, good looking people I know eat meat, dairy and a bit of junk food. I was fat, so I figured a little of something that makes people scrawny looking would be good for me. So I tried the diet. The diet stops me from craving junk. I don’t want any cookies and chips. That is a blessing! I feel lighter and more agile. The skin on my face looks younger and healthier. I can eat as much whole, vegan food as I want and lose weight. BUT, I feel weak and never feeling full starts to get me down. I lasted 10 days as a vegan. I slowly added dairy and meat back in my diet and I felt great, but it slippery sloped into adding non-so-whole foods and a little junk food. I stopped losing weight. My diet never did get as bad as it used to be. Okay, so it‘s the new year, and I need to get back to losing weight. Got on the whole, vegan bandwagon again. Again, I got great results; my face looked slimmer, prettier skin, feeling lighter… BUT the weakness and hunger started to get to me. Last night I ate plain yogurt and chicken to feel sane. Do you have links to pictures of sturdy looking whole food vegans? Do you have any tips for me to help me not be hungry and feel weak. I don’t like the taste of any faux meat and mock milk and such. I don’t believe we should be vegans because we should feel sorry for farm animals, so those suggestions wont encourage me. If you think people really need a bit of meat and dairy products are fine, feel free to say so too.    
  2. I need to put together a savory vegan finger food buffet for 10 women. Any ideas? My thoughts: veggies and hummus biscuits (can biscuits be made vegan?) with chutney ???? This will be at lunch time.
  3. My DH has issued a challenge for the remainder of this month. Except for my DD's birthday, we will try to avoid buying any groceries, and just use what we have in the pantry, fridge and freezer. I have a ton of dried beans (black, red, chickpeas), lentils, quinoa, and brown rice. I have some bags of frozen veggies, a few cans of tomatoes, bouillon, and onions. Plenty of almond milk, spices, and olive oil. If we have to, I will get some produce, but I would like to see if I can make it. We do have some zucchini and carrots, and a large salad for the next couple of days. I have some pasta as well. I have a few cans of fruit which I never use and don't know what to do with (no idea where they came from!) and a few other cans I should go identify! Any recipes/ideas so everything I make for the next 10 days doesn't taste exactly the same?
  4. Help! I need a delicious GFCF cake frosting recipe ASAP. :willy_nilly: Chocolate preferred, but any flavor is fine as long as it's really yummy. :) I just know this board can come through for me. :D
  5. I love it. I have so much energy. I am not tempted to cheat. I have lost 5 lbs so far (even though I am hypothyroid and PCOS). Just wanted to share!:party:

Breakfast Risotto: 1 cup uncooked arborio rice 1 (14 ounce) can light coconut milk (I used regular coconut milk in a cardboard box - they did not have a can of light) 2 cups water 1 (8 ounce) can pineapple chunks drained (I used fresh, already in chunks from wegman's produce department) 1/2 cup currants 1/2 cup chopped walnuts 1 tsp ground cinnamon 1/4 tsp ground cardomom 1/2 pitted mango or banana, peeled and chopped (optional) (I didn't use this) Pour 1 cup of water into a large skillet (I used a large saucepan) and place over medium heat. When it comes to a boil, add the rice. When the water is absorbed, add the other cup of water, and when that is absorbed, add 1 cup of coconut milk. Continue cooking and stirring frequently over medium heat till the liquid is absorbed, then add the remaining 6 ounces of the coconut milk. When the rice is cooked (you will have been at it about 20 minutes at this point) and all the liquid is absorbed, add the pineapple, currants, nuts, spices, and if desired, the optional fruit.   7. I recently watched Forks Over Knives which promotes a plant-based, whole foods diet. Naturally, the film focuses on the benefits of a vegan diet; there seem to be plenty of benefits. The people in the film had terrific health improvements when they cut out meat and dairy. No drawbacks are mentioned. So, I wonder what the folks on this forum have to say about veganism. Why not be a vegan?
  8. I want to support her, I really do. But---I don't want to buy expensive food when we're on a budget I don't want to spend extra kitchen time to make this work I don't want her health to suffer because she's not giving her body what it needs Recipes, thoughts, suggestions appreciated.
  9. I need inspiration. I like veggieboards, theppk, and Your Vegan Mom. On Youtube I like Real Food Daily and Manjula's Kitchen. I want to make coconut whipped cream now since I saw it on pinterest;)
  10. My 4 & 6 year old's do not like beans or lentils. A typical meal for us is some type of bean or lentil with a grain or starch such as brown rice or potatoes and veggies. They will eat the grain/starch and veggie but wont touch the beans or lentils. I have tried a variety of dishes and also figured in time they would get used to it. We do not eat any soy and no fake meats or anything like that. They do eat eggs, cheese, yogurt, PNBT and drink milk, but I am worried that they aren't getting enough protein. After reading the China Study I wanted to stop the cheese and milk products, but until/unless they start eating a better variety I don't think it's possible. Honestly, I am getting ready to throw in the towel and start serving meat again. Any ideas?
