I follow the cooking directions exactly, but I do double all the veggies (so a whole onion, 2-3 stalks of celery, a cup of shredded carrots, and 2 cups of chopped spinach) and use an entire bulb of garlic. (We love garlic, but you could certainly use less!) Also, I use her trick of using more cream and less milk (still 2 cups total), which makes for a slightly thicker soup. Definitely buy premade gnocchi. Homemade are not worth the trouble. (I have to use gluten free gnocchi, but the recipe calls for regular. It works equally well either way!)
