I'm making strawberry milk for tomorrow's breakfast. And if we didn't already have an overload of desserts, I'd make a pavlova topped with strawberries. When I freeze strawberries I like to do them two different ways. 1) wash, let dry, freeze whole (I like these for smoothies) 2) wash, half/quarter, top with a little sugar and let macerate. Freeze. The local way to make it is use a sort of sweet baking powder bisquit for the base, and then with the sliced strawberries mash about half of them. Then top with whipped cream. I actually like to fold some lemon curd into the cream though, it ads a great tangy quality. My bsolute favorite though is Eton Mess. Eton mess ..... from a quick google search, it looks like it's similar to a pavlova, but in individual servings? Is that right? For the record, I ended up making a batch of Strawberry Syrup last night that I'll freeze. I also froze some whole. And I tried a new recipe that the kids liked, but I didn't enjoy as much ... PB&J Frozen Greek Yogurt Bark Strawberry Jam .... Do you make freezer jam or can your finished jam? What's the easiest possible way to make jam? When I think Jam, I think pectin and hauling out the water bath and hoping that I have enough lids and rings and last minute washing of jars .......... Is there an easier way? Otherwise we eat strawberry shortcake either with a homemade sweet biscuit or with a waffle as a base. Most often we just eat them sliced up on cereal/oatmeal or just as fruit with dinner. For the eton mess, you make meringes, like for pavlova, but I find it easier to make cookie sided ones, one per serving. You bash them up and serve with the strawberries and whipped cream. You have to serve as soon as you mix it though or the meringues will melt away. I have done freezer jam and it is dead simple in a pinch. Not as tasty as the real thing though. I prefer not to use store bought pectin as I don't like the texture. I usually make a pectin stock with apples instead, or you can combine the strawberries with a fruit that has more natural pectin. it still does mean sterilizing, but if you have a dishwasher you may be able to do a lot of the cleaning with that. Any strawberries I buy now will likely come from California. We're at the height of blueberry season, and planning to go to a u-pick blueberry farm next week. DD6 in particular is a bit averse to cold stuff, but I found some popsicle molds at Dollar Tree the other day, so I snagged it. Yesterday DH was grilling with apple juice and there was just enough left to fill the molds, so that's what we did. They are all chowing down. So, I think I might take some of our strawberries, grind them up in the blender/food processor and make some popsicles with them. I have some kiwi too, I might toss that in there. Yes! Homemade popsicles are the best! That's usually how my "oops-I-gotta-use-them-before-they-go-totally-bad" summer fruits get used up. It makes two loafs, so DH will often take one loaf into work to share. Now that people know about this, the loaf never makes it past the first hour.
