Strawberries....

Strawberry breakfast bread (made it today after picking the berries)

Strawberry and blackberry cobbler

Strawberry ice cream

Jam

Chocolate covered strawberries

 

Can you tell we've been figuring this out all day??? 😊

Nothing beats freshly picked strawberries, except perhaps freshly picked peaches ðŸ‘

Dipped in chocolate. Nothing better.

We do 2 kinds - dark and white chocolate. Love them both.

Strawberries sliced in milk with cereal in the morning!

How do you freeze them? I gave each of my kids a bucket and we may have way too many.

When I freeze strawberries I like to do them two different ways.

 

1) wash, let dry, freeze whole (I like these for smoothies)

 

2) wash, half/quarter, top with a little sugar and let macerate. Freeze. (I like these for strawberry shortcakes).

I do jam.

 

Strawberry rhubab pie, and also it is a good jam combo

 

Strawbery shortcake.  The local way to make it is use a sort of sweet baking powder bisquit for the base, and then with the sliced strawberries mash about half of them.  Then top with whipped cream.  I actually like to fold some lemon curd into the cream though, it ads a great tangy quality.

 

My bsolute favorite though is Eton Mess.  I sometimes add the lemon curd to that too, though maybe that is not technically Eton Mess any more.

Eton mess ..... from a quick google search, it looks like it's similar to a pavlova, but in individual servings?  Is that right?  

 

For the record, I ended up making a batch of Strawberry Syrup last night that I'll freeze. I also froze some whole. 

And I tried a new recipe that the kids liked, but I didn't enjoy as much ... PB&J Frozen Greek Yogurt Bark

 

Strawberry Jam .... Do you make freezer jam or can your finished jam?  What's the easiest possible way to make jam?  When I think Jam, I think pectin and hauling out the water bath and hoping that I have enough lids and rings and last minute washing of jars ..........  Is there an easier way?

Freezer jam. My grandma would make it and then every family got some.that stuff had to have been loaded with sugar, but it was amazing.

 

Otherwise we eat strawberry shortcake either with a homemade sweet biscuit or with a waffle as a base.

 

Most often we just eat them sliced up on cereal/oatmeal or just as fruit with dinner.

For the eton mess, you make meringes, like for pavlova, but I find it easier to make cookie sided ones, one per serving.  You bash them up and serve with the strawberries and whipped cream.  You have to serve as soon as you mix it though or the meringues will melt away.

 

I have done freezer jam and it is dead simple in a pinch.  Not as tasty as the real thing though.  I prefer not to use store bought pectin as I don't like the texture.  I usually make a pectin stock with apples instead, or you can combine the strawberries with a fruit that has more natural pectin.  it still does mean sterilizing, but if you have a dishwasher you may be able to do a lot of the cleaning with that. Just make sure to buy the rings and lids first.

Strawberries are a winter fruit here (summer is too hot for them) and strawberry season is in February-March. Any strawberries I buy now will likely come from California. We're at the height of blueberry season, and planning to go to a u-pick blueberry farm next week.

I thought of this thread when I handed my kids homemade apple popsicles after lunch....and they ALL ate them.  DD6 in particular is a bit averse to cold stuff, but I found some popsicle molds at Dollar Tree the other day, so I snagged it.  Yesterday DH was grilling with apple juice and there was just enough left to fill the molds, so that's what we did.  They are all chowing down. 

 

So, I think I might take some of our strawberries, grind them up in the blender/food processor and make some popsicles with them.  I have some kiwi too, I might toss that in there. 

Yes!  Homemade popsicles are the best!  That's usually how my "oops-I-gotta-use-them-before-they-go-totally-bad" summer fruits get used up.  They are great on a hot summer day .... or when trying to get a read aloud in when everybody is totally bonkers and loud.

We make smoothies and pour them into popsicle molds, easy to get some other healthy stuff in there with the fruit.
