I am making potatoes for dinner. I bought them last week, and forgot to use them. They're a little soft. Not sprouting. Are they still good to eat?

Yes, they're probably fine. If there's any doubt, smell them. You'll know if they're rotten!

We would eat them too. Worse things have certainly been ingested around here.

If you let them soak in cold water they will firm up.

Soft potatoes are great for making a quick potato soup. Much less boiling time.

As long as they are not rotting and growing white fuzzy stuff on them, we eat them. Soft potatoes are fine to eat. So are potatoes that are sprouting...just make sure you break off/cut off the sprouts completely.
