ILiveInFlipFlops Posted August 28, 2016 Share Posted August 28, 2016 (edited) I'm making shrimp risotto for dinner tonight (in my Instant Pot, squee!), and I'm kind of craving something mushroom-y. Could I add mushrooms to shrimp risotto, or do those two flavors really not blend right? I can't think of anything I've ever eaten that included both elements. Thanks! I usually have them in some sort of Italian-ish dish with tomatoes and/or bell peppers as part of the dish, but shrimp and mushrooms in risotto sounds good too. It's often called pecorino romano--similar to parmesan cheese, hard and fairly dry, easily grated. It's actually all we use since I tend to have an allergic reaction to parmesan cheese but very rarely to romano. IMO (given my not very refined palate), romano and parmesan are interchangeable.
