Night Elf
The mix calls for two eggs and I only have one. What happens if I don't use two eggs?
Kassia
I read you can use 1/4 cup yogurt?
Kassia
http://pioneerthinking.com/cooking/homemade-egg-substitute I found this, not sure if it's helpful.

Jen500
I think it will just make them less cake-like
Ali in OR
I'm making brownies tomorrow and my mix only calls for 1 egg--maybe yours will be okay with 1 too!
MEmama
More fudgy, less raised. It's a win in my book! :)
Night Elf
Ok, I looked at the suggestions. I don't have stuff in my house to make a substitution. I decided to make the experiment. I googled and someone said they would turn out more fudgy and if you use more eggs it makes it more cake like. We like fudgy brownies so I decided to try it. So too late to turn back now! They're in the oven. What made it worse is that DH agreed to go to the store for the brownie mix so I wouldn't have to get dressed and go out. Them when I realized I had only one egg, I tried calling but he was pulling onto our street. I hated to ask him to go back.
MEmama
If your mix is too dry, you can a tablespoon or two of water. I don't think I've ever needed too, though.
SproutMamaK
I know you've already got yours in the oven, but if it helps I actually do this on purpose to make more fudgy brownies from a box mix. Leave out an egg and instead put in a big heaping spoonful of Nutella or peanut butter.
