Sliced apples (remember to prevent browning) and other fruits. Selection of cheeses, particularly a strong cheddar. A pickle tray. Something of the crispy potato variety: hash browns, tater tots, fries, wedges, hash brown casserole with cheese on top... Anything like that. Something based on corn: just a plain side of cooked frozen corn with salt and butter, or corn on the cob, or a creamed corn casserole, or a corn salad. Edited July 1, 2016 by bolt. You can wrap the corn in foil with a little butter and salt and just cook and hold it in the oven or crockpot. A green salad is nice, but the pulled pork, coleslaw, baked beans, and corn menu is just easier for a large group. ETA: The Cracker Barrel hashbrown casserole is easy to make ahead in bulk and is a real crowd pleaser. That would work with your menu. In fact, I was wondering what to feed people for a potluck tonight and I think I'm going to do this with some ham in it!
