Which knives to get?

Nearly 20 years ago, my husband and I purchased some Henkel's knives (TwinStarr...never needs sharpening).  While they aren't "dull-dull" -- they are no longer "sharp-sharp" -- which makes cutting things (especially bread and meat).  I contacted Henkel's about a way to sharpen, and they offered to replace my knives with either the Professional S or the Four Star II.

 

Any opinions?  

 

I love the weight and handle shape of my current knives -- none of the Henkel's knives have this shape. My knives do get a great deal of use.  Often, multiple knives used for the same meal.  I do not own a food processor...I use my knives a lot.
