Lychees?

Help. I have a pound of fresh lychees and while I like them I don't love them enough to eat them all. Any recipes to use them up?

No idea for recipes, but my daughter said she would come over and help you eat them!  :laugh:

you could cut them up and put them in jello. I don't know what flavor would go good with lychee - does jello brand make mango flavored jello? 

 

Or make jello from plain gelatin and put the lychee in it. 

 

If you go to an asian/indopak store they probably sell lychee flavored jello.

 

you could also chop them up and put them on ice cream or in some sort of whipped dessert. You might even be able to freeze them for later use. 

 

if they are too sour, put sugar on them. OR make a lemonade out of them (lychee, water, sugar)

 

 

but peeling, pitting, and chopping them would be more hassle than just eating them :)

Peel the lychee flesh off the pit and dump into any fruit cocktail or fruit salad.

 

Squeeze the lychee pit out and put a cut pineapple cube in.

 

For jello, either plain or almond flavored works.

Can you freeze them?  I bought frozen lychees two months ago. They are not peeled but peel easily once they thaw.  My son loves lychees and has put them in smoothies.  (I have never found them to purchase before and also bought a couple of cans of lychees!)
