Appetizer Ideas Needed

I was asked to bring an appetizer for a party on Saturday. The main dishes are lasagna, meatballs, basically Italian food. Also, I live 2 hours away but will have time to reheat, or assemble the dish before it's served. I'm really at a loss, should I stay with the Italian theme or is it OK to deviate?

I think it's ok to deviate, but it also would be nice to stick with the theme. How about bruschetta? Slice the bread and make the topping before you leave home, then when you arrive, toast the bread and slather the topping on.

An easy appetizer is to chop up a small jar of marinaded artichokes and mix with a bit of the marinade, chopped garlic, mayo 3/4 c. and Parmesan cheese (1/2 c.) I just wing these amounts.

 

Cut a loaf of italian bread in half the long way and Spread artichoke mixture on both sides. Sprinkle with some mozzarella and bake at 350 til warm and toasty 10-20 minutes. Can broil for a minute at the end but I usually don't.

 

Cut into slices and serve warm.

This goes very well with Italian food and is the most sinful stuff you'll eat. I love it. I could eat the whole loaf and not care about the rest of the meal.

I'd probably pair with some caprese skewers or an antipasto platter, though.

My artichoke bread is similar. I'll make it for us someday. :D
