I have been pressed for a Christmas list and thought it would be fun to try make cheese at home.

Has anyone here ever done this via a book and if so, what book looks good and recipes can be realistically done?

In other words, I don't have oak flavored barrels where the cheese can age....

We have been making cheese today with Ricki Carroll's cheese making kit. (Soft cheeses) I think it is $24.95 on her website www.cheesemaking.com. We made 4 batches of mozzarella and it turned out great. I also got her hard cheese kit and we are trying cheddar today but you need a cheese press for that, which is more involved. She also has a book which covers all of it, but the kits are nice and have enough ingredients for 30 batches. It is a lot of fun! ETA the kits aren't necessary but there are a few specialized ingredients that you would need, so you could get her book and buy the ingredients.

Most people I know started with Ricki Carroll's "Home Cheese Making", http://www.amazon.com/Home-Cheese-Making-Recipes-Homemade/dp/1580174647/

http://www.cheesemaking.com/ has some good kits... your local home brewing store also might have some good resources.

Mozzarella is fun and easy. Anything aged is more committing.

I used a book called something like _And That's How You Make Cheese_. I didn't do a kit and don't think they're necessary. I'm sure there are many newer books out there, but that one was simple and there was plenty to do wih basic equipment.

You could also start with some online recipes and basic equipment and supplies to see how you like it.
