ILiveInFlipFlops
We need to eat more vegetables here, but we're so tired of our usual methods. Can anyone share some of their family's favorite recipes for getting in lots of veggies? Thanks!
milovany
Roast them! Toss in olive oil, salt lightly, and then bake in a 400 degree oven until browning/browned. They are SOOO good prepared this way (depending on vegetable, of course). We like roasted Brussels sprouts, parsnips, turnips, rutabagas, potatoes, sweet potatoes, carrots, and more. Mmmmmmmm. Flowing Brook
Green beans saute them in coconut oil and sprinkle garlic powder. I can't make enough of these no matter how much I make they are gone in no time. Kale or collard greens saute them in coconut oil and mix in Braggs amino acid. Delicious. I have made mixed vegetables with garlic powered and Braggs. So good. Asparagus baked in the oven with olive oil and a little lemon juice. Stir fry spinach, tomato, mushrooms, carrots, zucchini, squash, together add a little chicken. Yum
snickerplum
I agree with roasting. Choose your veggies, choose your fat (coconut oil, olive oil, lard - yes, lard, but not the yucky brick from the grocery store), choose seasonings, toss, spread on a pan and bake! Mm mm. Broccoli and sweet potatoes are my favorite!
Stacia
If your library has the Eat to Live Cookbook, check it out. Many great & tasty ideas in there.
zoobie
Another vote for roasting! Broccoli is good roasted and finished with a spritz of fresh lemon juice. You said dairy free? You could sprinkle with nutritional yeast instead of Parmesan. We like Brussels sprouts roasted--try it with bacon drippings instead of oil or look for recipes with balsamic or soy. Green beans are great roasted. Carrots too--savory with spices or try honey roasted. Same for roasted sweet potatoes. Kale can be roasted for crispy chips. Brussels sprouts are good sautéed too. My phone isn't cooperating, but I'll try to edit with a recipe... http://www.skinnytaste.com/2011/11/sauteed-brussels-sprouts-with-pancetta.html?
