KatieJ
Brunch sunday am will includeawesome carmel rolls with way too much sugar courtesy of my Daughter In law. I am making the eggs. I would prefer something without additional carbs such as hashbrowns or bread cubes. Just eggs, veggies, meat, etc. Thank you!
Cinder
Perhaps your favorite quiche made without the crust?
TN Mama
This is the recipe I use. I love that I can change it up based on what veggies we have in the house. I added ham once, but usually add bacon instead. I like to add sauteed spinach & mushrooms (and extra garlic). http://allrecipes.com/recipe/baked-omelet/detail.aspx
unsinkable
This DOES have extra carbs (the bisquick) but it is really flexible in terms of what you can add. Change or o it the bacon, change the cheese, add more veggies. HTH Impossible Quiche Recipe 12 Bacon strips, cooked to crisp, drained, and crumbled 1 Cup Swiss cheese, shredded (about 4 ounces) 1/3 Cup onion, diced 2 Cups milk 1 Cup Bisquick 4 Eggs 1/2 Teaspoon salt 1/8 Teaspoon ground black pepper Preheat the oven to 400 degrees F. Lightly grease a 10-inch pie plate. Sprinkle the crumbled bacon, shredded cheese, and diced onion (in that order) evenly over the bottom of the pie plate. Beat the eggs with the salt and pepper. Stir in the milk. Add the Bisquick and beat until smooth. Pour over the ingredients in the pie plate. Bake for 35 minutes or until a toothpick inserted into the center of the quiche comes out clean. Let cool on a wire rack for 15 minutes before slicing and serving. Makes 4 to 6 servings.
73349
Sautee a cup or two of your veggies of choice (we like broccoli and mushroom). Stir into a bowl of 5 to 6 beaten eggs. Add a little pepper, oregano, or whatever spices you like. Pour into a buttered/greased glass pie plate. Bake ~25 minutes at 350F.

LucyStoner
Do you have any ramekins? I will do little baked eggs with meat, veg and cheese in those. Just put 1-2 eggs per cup and stir in the goodies, top with cheese and bake until golden and puffy. Another option is to put a slice of ham in each cup of a muffin tin to form a little cup and then fill with 1 egg and top with cheese. Pesto and other toppings can be used.
