From WendyK: Mine is probably not as low carb as you would like. I just peal the eggplant and slice it (1/4 inch or thinner). Then I dip it in egg wash, then bread crumbs. You can either shallow fry the pieces or bake them at 375 turning halfway (40 minutes to an hour total). Brush them with a bit of oil if you bake them.

 

I make my own sauce. It's ground Italian sausage browned and mixed with one large can of tomato puree, Italian seasoning, garlic (onion if you want) and about 2 TBSPs of tomato puree simmered for an hour.

 

I start with a layer of sauce, then eggplant, then sauce and mozzarella cheese (you can also add in some Parmesan), then continue until everything is used up with the top layer being cheese. Then I bake that for about 40 minutes at 400 (covered) then uncover to brown up the cheese for about 10 minutes.

 

I have seen recipes that do the same, but only bread the eggplant on one side. I have never tried it without any bread crumbs, but hey you could try it.

 

Moussaka is similar except you also make a bechamel sauce (white sauce) and layer that in as well. I could swear the eggplant is breaded in that as well, but maybe not. It's been a long time since I've made that.

Sheryl, another idea for you is to buy chicken deli meat (look for ones with the least amount of added sugar and other icky stuff. I usually buy Dietz and Watson at Costco for this), and roll your lasagne filling in doubled over deli chicken. Then do sauce, cheese, etc. just like you would with regular lasagne. Or make it like stuffed shells. I sort of "burrito" it so the ends are closed off and the cheese doesn't run out.

 

I love eggplant but the rest of my family does not. My mom makes really good breaded eggplant where she breads it just using parm or parm and a little almond flour plus seasonings, and then she bakes it.

thanks for that. something to consider as I may make 2 versions. i'm set with eggplant, but will keep this idea in mind too! Thanks! You are very creative and your ideas sound great!

Ah, I just benefit from the creative people who come up with these ideas! I've been LCing for almost 10 years, and I'll tell you, the recipes and options have evolved tremendously! I am so. thankful. to the people who actually do the work to come up with this stuff. I think I learned about the deli meat thing on the LC friends site.
