Anyone have a fantastic twice baked potato recipe?

I don't have a recipe, per se, but I can tell you what I put in mine. They rock, if I do say so myself. And they are not low fat.

 

Heavy cream

Butter

Sour Cream

Cream Cheese

(not a lot of any of the above....just enough to give the potatos a nice creamy texture when you mix them)

a generous amount of garlic powder

chives (dried or fresh...doesn't matter)

salt and pepper to taste

 

Once i scoop them back into the potato skins, I put cheese (usually cheddar) and most of the time crumbled bacon on top. Stick them back into the oven at about 375 for 10 or so minutes until the cheese is all melty.

Oh, my. I think I'm in love. I would eat that any time, for any meal.

 

I'm not sure it would reheat well, though, which makes me sad. I guess I'll just have to get someone else to get up extra early and make them for me to eat fresh. Somebody remind me of this when Mother's Day rolls around. :)

If anyone is trying to lose weight/eat healthy and is getting sad by this thread, LOL, never fear! We had SkinnyTaste's Twice baked potatoes (mashed cauliflower is added with the scooped out potato--incredible) and every single person in this picky family loved them!!
