StaceyinLA Posted January 22, 2013 Author Share Posted January 22, 2013 SUPER easy - pound peeled, deveined shrimp, few Tb cornstarch, couple cups flaked coconut, 3 egg whites. You beat the egg whites to soft peaks, put cornstarch one one plate, coconut on the other. Dip the shrimp in cornstarch, then egg white, then coconut. Put on baking sheet or stone and bake on 400 for 8-9 min. Remove, turn shrimp over and bake 10 more min. Dipping sauce called for pineapple preserves, but I just didn't want all that excess sugar. I took about 3/4 c crushed pineapple (in its own juice), simmered it down til the liquid was gone, then added 1 slightly overflowing Tbsp fresh line juice, and 2 t finely chopped Serrano peppers (store had no fresh jalapeños). I made this earlier in the day and put it in the fridge. I wound up making sticky rice, and a strawberry, avocado and spinach salad. It was really good!
