WiseOwlKnits
Anyone have a knock-your-sock-off recipe for Mexican Wedding Cookies (aka Russian Wedding Cookies and Snowballs)? I'd really like to make them, but I don't have a recipe and I don't want to just pick one off the net. If I'm going to make them, I want them to be good! :D
Alenee
Are you talking about Russian Tea Cakes? Here's my recipe: 1 C softened butter 1/2 C powdered sugar 1 tsp vanilla 1/4 tsp salt In large bowl, combine at low speed about 1 min. Blend well. 2 1/4 C flour Gradually add flour at low speed. 3/4 C finely chopped nuts (I prefer pecans but you can use any kind) Stir into dough. Chill dough. Roll into 1 in. balls and bake at 350* 8-10 min, firm to touch but not brown. Roll in powdered sugar. Makes 4 dozen
RoughCollie
I use the same recipe Alenee does, but this year I added 2T of butter to each batch so the dough wouldn't be so crumbly. The cookies have the same taste and texture, but are easier to roll into smooth balls. I make each ball from a level 1.5 T of dough. I roll them in powdered sugar while they are hot from the oven. After they cool, I roll them in powdered sugar again.

Clear Creek
We just made these and they were so good! And they tasted even better after the first day. I made this same recipe, but with ground pecans instead of almonds. They go well with coffee :D
